A Letter To My Future Self...




For quite a while I have been wanting to write a letter to my future self but had never had the chance to write it. While it's been sunny I have actually got round to writing it. Surprisingly I wrote 2 pages,
at first I found it quite strange but once I got into it I really enjoyed it and woffled on about nonsense. I wrote not to open until 23/7/20 (6 years), I know it's not a long time but I think it will be long enough to see a change in my life because then I would be at university or have a full time job and maybe my own house.

I wasn't really sure what to write but I just wrote about what is happening now and what I would like to do in the future. I asked myself lots of questions (eg: Did you pass your driving test first time? Did you get good GCSE results? Have you carried on blogging?) I really can't wait to open it in 6 years time! Now all I have to do is remember to open it and not lose it.

Blueberry Muffins | Recipe




I love muffins especially blueberry ones but I've never actually made them myself before, I've baked cakes and cupcakes but never muffins. I do have to admit for my first time I am very proud and
pleased with my results. They are super easy and quick to make and taste really good, especially for breakfast!
If you don't like blueberries you could replace them with other fruit or chocolate.

Makes 12 large muffins
Ingredients
375g Plain flour 
4 tsp Baking powder
100g Brown sugar 
100g Caster sugar 
2 eggs
1tsp Cinnamon (optional)
200ml Milk
1tsp Vanilla Extract
125ml Vegetable oil
350g Blueberries (fresh or frozen, I used frozen)
Method
1. Preheat the oven to 220ºc / 425ºF / Gas mark 7 and place muffins cases into a tray 
2. In a bowl mix the eggs and sugar together, then add the milk, vanilla and oil. 
3. Add the other ingredients into the wet mixture and fold in. Don't over mix otherwise they will go tough. To your mixture add 3/4 of the blueberries and fold in carefully otherwise they will get squashed. 
4. Spoon the mixture evenly into the cases and add the leftover blueberries to the top. 
5. Place in the oven and leave for 5 minutes on 220ºc. After 5 minutes turn the temperature down (with the muffins still in the oven) to 180ºc and leave to cook for a further 25-30 minutes until they are golden brown and look yummy to eat.

2014 Summer Bucket List

Recently I have seen a few bloggers do their summer bucket list, I find them really interesting seeing what people want to achieve over the summer. I put together a list of some things I would like to achieve over the summer and while the weather is nice and the nights are long. Let's make it a summer to remember!  

Drink more water
I think this is on most peoples but I really need to because I always find myself getting headaches from not drinking enough, it also it has benefits on my skin.

Say "Yes" more 
I'm a very shy person and when it comes to new opportunities I like to stick in my comfort zone, this summer I really want to say "Yes" more and not stick to my safe path. 

Yoga
Over the past week or so I have been doing some yoga most nights and really enjoying it. Over the summer I want to carry on. Yoga also has some great benefits because recently I have become stiff, it makes you feel really relaxed after as well. Check out the 30 day yoga challenge on YouTube. 

Take more photos
I love taking photos and I really want to use my camera to it's full potential because now I take most of the photos on manual. I want to take lots of photos on my Fujifilm Instax 8 because they are a great memory of the summer.

Try some new recipes
I love cooking and baking and I really want to try some new things hopefully over the summer I can cook lots of new tasty recipes.

Launch my jewellery store
This is something I have been working on for a while and I really hope over the summer I can finally launch.

Go outside more
Recently I have found myself in my room with my laptop while it's nice and sunny outside. I love the long light nights throughout the summer, I need to make better use of them even if it's just sitting outside reading a book.  

Go to more car boots sales
I have only ever been to one car boot sale which I really enjoyed. I want to go to more because if you're lucky, you can pick up some great bargains even if it does involve getting up super early. 

Have a movie marathon
I have been wanting to do this for a long time, I'll get my sister or friends and we can just watch loads of movies back to back with popcorn and sweets. Any recommendations

Carry on blogging
I have been really enjoying blogging and I want to keep it going throughout the summer. Hopefully lots of new posts as there is not school!
